Cod Tacos Recipe
600 g cooked and shredded cod
4 tablespoons of oil
1 cup cooked potatoes cut into cubes
2 cups filleted olives
1 pinch of paprika
4 cups tomato pulp
Salt and pepper to taste
2 tablespoon minced garlic
2 tablespoon chopped red pepper
2 tablespoon chopped yellow pepper
2 tablespoon chopped green pepper
2 tablespoon chopped red onion
Frying oil
Preparation
Fry the onnions and peppers for a few minutes, add the garlic, stir. Add the tomato pulp and the paprika and cook for a few minutes. Add the cod, potatoes and olives, mix everything together, set aside and let cool down.
Heat oil in a frying pan and soak the tortillas in hot oil without frying (so they don´t break when rolling). Put some cod on the tortilla, spread and roll the tortilla, hold with a toothpick. Fry until golde brown.
Serve with sour cream, feta cheese and Salsa Taquera Herdez.
